I became vegan for health reasons in 2012 and discovered an incredible world of cuisine that has so much more versatility than I could have imagined. I was diagnosed with chronic mononucleosis and told by multiple doctors that I would have to learn to live with this disease and manage it with steroids for the rest of my life. After six months of trying failed cures (most extreme: homeopathic “snake poison” … yes … really …) I decided to switch to a whole foods plant based diet, figuring I had nothing to lose. Within 2 weeks my blood results started to show positive changes and within 2 months I had completely rid my system of the virus. I have been a healthy, active, card-carrying vegan ever since.
My story is one of many where people are suffering and common Western medicine has no cure — depression, fatigue, stomach difficulties, acne, high blood pressure, diabetes, heart disease, obesity, cancer, chronic illness, and undiagnosed symptoms may all be ERASED (not just treated) by switching to a natural, unprocessed, whole foods vegan diet.
But this blog is not about me — it’s about sharing easy recipes with you that are quick to make and will help you feel and look your healthiest. Whether you are wanting to rid yourself of illness, lose weight, treat symptoms, decrease the amount of medications you are taking, or are just generally curious about vegan eating, the food and tips I’ll be posting here are meant to inspire and improve your day-to-day life.
